Industrial refrigeration plays a vital role in every cured meat factory. For 50 years, Madefrigor has made the refrigeration sector its core business. Among other services, we design, manufacture and install ovens and cooking chambers for mortadella according to both hygiene/food standards and the exacting technical and economic requirements of cured meat producers.

The mortadella cooking systems, designed to be installed in prefabricated or masonry rooms, are sized based on the maximum product quantity the facility can hold. They are composed of a variable-speed centrifugal unit heater, insulated ducts for air circulation outside the room, supply and intake ducts complete with internal diffusers and regulators, and motorised shutters for air regulation, which are controlled by the computer according to the product temperatures.

Mortadella cooking systems

Inside the mortadella cooking systems are 2 pneumatic shutters for the intake and expulsion of external air, controlled by the humidity system using a high temperature probe. There is a lamella exchanger on the hot air exhaust pipe, which interacts with the external air to provide heat recovery. The entire industrial system for cooking mortadella is controlled by a computer, which coordinates all the operations on the basis of the product temperature values (4 corners of the oven) and according to the programmes stored by the operator for the type of product to be cooked. This system, like all Madefrigor systems, is technologically advanced, designed to ensure a low environmental impact, and can be tailored to your needs.

Industrial system controls

The mortadella cooking system is managed by a PLC, which can be programmed with all the different processing phases (Recipes).

Automatic programmes

The PLC coordinates all the operations based on the product temperature values (4 corners of the oven) and according to the programmes stored by the operator for the type of product to be cooked.

Data collection

The display shows graphs for the ambient temperature, product temperature (the average of the 4 readings), ambient humidity and times.
