In the heart of dairy production in Malo (VI), at the Brazzale spa plant, we have recently tested an advanced system of aging and refrigeration, designed to improve the quality and the efficiency of the production of Provoloni and Asiago. During the maturing process, the client complained of excessive mould formation on the outside of the cheese.
The introduction of state-of-the-art technologies promises to revolutionise the maturation process, ensuring accurate control of environmental conditions by eliminating mould formation and, consequently, product waste.
Maturing plants Vertical Air System
The choice of the thermo-hygrometric parameters of ripening is crucial in all the processes concerning the dairy sector; therefore, it becomes important to install solutions that guarantee its constant control.
The distribution system “Vertical Air System”, equipped upstream with air treatment units specific for use with modular flow rates, allows us to feed and precisely adjust the thermo-hygrometric parameters in the different maturing rooms, influencing the organoleptic characteristics of the cheese. This is done uniformly, through vertical perforated pipes, with nozzles positioned between the stacked escalopes of the cheeses.
By guaranteeing ideal and constant thermigrometric parameters, the processes of mould proliferation are countered and, in the context, the action of enzymes is nourished, guiding a correct maturation process.
In addition, advanced solutions have been introduced for air transport ducts to guarantee food quality and safety.
The Active Antimicrobial system that we have adopted, uses silver ions to eliminate from the internal surfaces of the channels over 600 families of harmful microorganisms in aeraulic plants.
Energy Saving Applications and Inverter on Refrigerator Compressor
Innovative accessories have been implemented to address energy challenges. A dynamic condensation control system manages the temperature in real time, minimizing energy consumption. The use of inverters on refrigerating compressors allows to adapt the volume flow, optimizing the electrical absorption. The use of EC fans on capacitors completes the system.
In conclusion, the aging and refrigeration systems installed in Malo (VI) represent a qualitative leap in the dairy sector, combining technological innovation with attention to product quality. The combination of energy efficiency, environmental condition control and antimicrobial solutions promises to elevate dairy production to new standards.
