For 50 years, Madefrigor has brought its professionalism and passion for industrial refrigeration to the food industry. Specifically, we design curing chambers for prosciutto, tailored to suit the different curing techniques.

Our systems offer excellent performance, low energy consumption, and cover every stage of the process: salting systems; pre-resting and resting systems; and drying and curing systems for prosciutto crudo. To support the industrial processes within cured meat factories, we create curing chambers for prosciutto and cured meats in general. After the initial stages, the product is treated with low intensity-air at lower temperatures and higher humidity levels, ensuring the ideal characteristics while respecting its optimal final weight loss.

Prosciutto curing chambers

Madefrigor creates custom products according to the specific characteristics of the prosciutto. For example, our salting systems for prosciutto crudo consist of chambers equipped with heating and cooling to guarantee perfect salt penetration. Like many of our products, this salting system is available in two versions: one combines static evaporators with wall-mounted fireplaces with heating elements, while the other uses ceiling-mounted unit heaters with heating and cooling coils. We also manufacture pre-resting systems and resting systems for prosciutto crudo, which consist of chambers for the first and second cold drying phases, which each have specific characteristics. In conclusion, Madefrigor’s custom products are able to satisfy even the most exacting requests.
